Alaska Sablefish aka Black Cod
Many of you have never heard of Sablefish (also known as Black Cod) because the majority of the catch is shipped to Japan and is seldom seen in our U.S. domestic fish markets, however, if you are among the few seafood aficionado's who do know the virtues of black cod, CONGRATULATIONS!!

For the rest of you we hope to make you aware of this wonderful fish and encourage you to start asking for it at your favorite seafood market. The Japanese have fondly nicknamed it "butterfish" because it is so tender (melt in your mouth) and rich in Omega-3 fatty acids (higher even than king salmon) as well as polyunsaturated fat. Thanks to its rich oil content it is exceptionally flavorful and an excellent fish for smoking and grilling. It is very forgiving and seems you virtually can not overcook it.

This premium whitefish's average commercially caught weight is less than 10lbs and measure about 2 feet in length although it can weigh upwards of 40lbs. Most Alaska sablefish is longlined in the cold, pristine, deep waters of the Bering Sea or Gulf of Alaska. Although sablefish does resemble cod, it is not a member of the codfish family, but is a member of the Anoplopomatidae family, a group of fish confined to the North Pacific.

Alaska sablefish, a valuable source of high-quality protein, also furnishes important minerals including iodine, phosphorus, magnesium, copper, iron, zinc and calcium. Rich in polyunsaturated fats, sablefish is well suited to low cholesterol diets. High in protein and oils it could also be well suited for a low carb diet. Check with your physician for health benefits specifically related to you.

Sablefish can be easily prepared in a variety of ways. It can be smoked, grilled, baked, fried, microwaved, poached or steamed. It can be simply seasoned with salt, pepper & herbs then drizzled with lemon juice and microwaved. It can be marinated then grilled, broiled or smoked. It can be steamed and served with your favorite wine sauce. Fresh sablefish is available May through November.
